Recipe Ingredients for South Beach- Gazpacho

600 ml tomato or vegetable juice
225 g peeled, seeded, finely chopped fresh tomatoes
110 g finely chopped celery
110 g finely chopped cucumber
110 g finely chopped green pepper
110 g finely chopped spring onions
3 tablespoons white wine vinegar
2 tablespoons extra-virgin olive oil
1 clove garlic, finely chopped
2 teaspoon fresh parsley, chopped
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/2 teaspoon fresh ground black pepper

Recipe Directions for South Beach- Gazpacho

  1. Combine the juice, tomatoes, celery, cucumber, pepper, onions, vinegar, oil, garlic, parsley, salt, Worcestershire sauce and black pepper in a large glass or stainless-steel bowl.

  2. Cover and refrigerate overnight. Serve cold.
