Recipe Ingredients for South Beach Black Bean Soup

1 tbl olive oil
8 scallions, thinly sliced
2 celery stalks, thinly sliced
8 garlic cloves
4 tsp cumin
1/4 tsp cayenne
60 oz black beans
30 oz diced tomatoes
3 cups chicken broth
2 tbl lime juice

Recipe Directions for South Beach Black Bean Soup

Sautee vegetables in oil and seasonings till soft, add beans, tomatoes and broth - simmer for 10 minutes - in batches process black beans and readd to soup - simmer 20 minutes
