lb puff pastry 1 tsp butter Good pinch of salt 1 stick cinnamon 3 cups boiling milk 2 tsp custard powder 3 tsp corn flour 3 tsp cake flour 2 Tbls cold milk cup sugar 4 Large eggs, separated tsp almond essence Cinnamon and sugar

Recipe Ingredients for South African Melktert (Milk Tart)

1/2 lb puff pastry
1 1/2 tsp butter
1 pinch of salt
3 cups milk
3 tsp corn flour
3 tsp cake flour
2 tbls milk
1/2 cup sugar
4 large eggs, separated
1/2 tsp almond essence

Recipe Directions for South African Melktert (Milk Tart)

  1. Preheat oven to 200 C Gas mark 6

  2. Line the bottom and sides of 2 pie plates with

  3. the puff pastry and raise edge.

  4. To make custard pie filling, add butter, salt, cinnamon

  5. to boiling milk.

  6. Mix custard powder, corn flour and cake flour

  7. to a paste with the cold milk and stir in a little

  8. of the hot milk mixture.

  9. Stir the custard mixture into the hot milk.

  10. Add 4 Tbls of sugar and bring to boil, stir constantly.

  11. Remove when mixture is thickened and discard cinnamon.

  12. Beat the whites, stiff but not dry. Gradually beat in rest

  13. of the sugar.

  14. Beat the yolks lightly and add a little of the custard mixture.

  15. Then add the almond extract.

  16. Fold in the whites, being careful not to beat but add a gentle

  17. folding motion.

  18. Pour mixture in pastry cases and bake for about 10 min.

  19. Lower the temperature to 180C Gas 4 and bake for further

  20. 10-15 or till filling has set.

  21. Cool slightly and sprinkle the top with cinnamon and sugar.

  22. Serve cold.
