Recipe Ingredients for Sourdough Strata with Tomatoes and Greens

12 tomatoes, quartered lengthwise
1 tablespoon thyme
2 tablespoons olive oil
3 cups whole milk
8 large eggs
10 ounces fontina cheese, grated about 3 cups
1 cup parmesan cheese, grated
1/4 teaspoon cayenne pepper
1 pound sourdough bread, cut into cubes about 8 cups
4 cups of chopped spinach

Recipe Directions for Sourdough Strata with Tomatoes and Greens

  1. Preheat the oven to 350.

  2. Toss the tomatoes with the thyme, olive oil and 1/2 teaspoon salt and black pepper in a bowl.

  3. Spread on a baking sheet and roast, stirring once or twice, until the tomatoes are slightly dried and browned in spots, 1 hour to 1 hour and 15 minutes.

  4. Cool completely.

  5. Whisk the eggs and milk, fontina, 3/4 cup parmesan, cayenne, 1 teaspoon salt and 1/4 teaspoon black pepper in a large bowl. Add the bread cubes and greens and toss to coat.

  6. Pour into a 3 quart (13x9) baking dish, ten top with the roasted tomatoes.

  7. Cove and refrigerate overnight.

  8. The next day, preheat the oven to 350. Sprinkle the strata with the remaining 1/4 cup of parmesan and bake, uncovered until golden brown and almost set, about 45 minutes.

  9. Turn off the oven but keep the strata inside for 10 minutes.

  10. Serve and enjoy!
