Recipe Ingredients for sourdough oatmeal waffles

0.67 cup White Whole Wheat Flour
0.67 cup dry Old Fashioned Quaker Oats
1 tbsp Vegetable Oil, Canola
1 extra large egg Eggs White Extra Large Size
2 tsp Sugars, Granulated
2 tbsp Milk, Buttermilk, Dried
0.5 tsp Salt, Table
0.25 tsp Baking Soda

Recipe Directions for sourdough oatmeal waffles

  1. combine flour, dried buttermilk, and sourdough starter; add about 2/3 C water, mix very thoroughly (100 strokes), and let stand overnight.

  2. Return starter to refrigerator for next use.

  3. Add rest of ingredients except baking soda. Allow oatmeal to absorb moisture for about 1/2 hour.

  4. Dissolve baking soda in about 1/3 C water and add.

  5. Add more water to make final batter the consistency of heavy cream.

  6. Bake in waffle iron. Makes two or three Belgian waffles.
