My mother used to make this for me as a kid. It's a super tasty way to get you to eat your cabbage.

Recipe Ingredients for Sour Middle Eastern Cabbage Soup

2 heads cabbage
2 cups vegetable stock
3 oz tomato paste
28 oz crushed tomato
2 small onions
2 tsp cinnamon
1 tsp salt
1/2 tsp pepper
3/4 cup lemon juice
1 tsp olive oil
1 tsp sugar

Recipe Directions for Sour Middle Eastern Cabbage Soup

  1. 1. chop onions, saute in olive oil until softened.

  2. 2. chop cabbage into thin strips (about 3" long by about 1/4" thick) and add in batches. Add salt and stir until reduced to about 1/4 original size or until strips become very tender. 10-15 minutes.

  3. 3. Add crushed tomato and tomato paste.

  4. 4. Add cinnamon, pepper, lemon juice, and sugar. If you have some, add some middle eastern baharat spice blend (buy at middle eastern market or make your own: http://www.theepicentre.com/Spices/baharat.html). I tsp should do.

  5. 5. Add 2 cups of stock. This soup should be very 'thick' and not too watery. If you prefer, you can always add more stock.
