Turkey Enchiladas with sour cream, cheese, and spicy sauce

Recipe Ingredients for Sour Cream Turkey Enchiladas

466 grams Turkey
1 can cream of chicken soup
1/2 cup Light Sour Cream
8 oz. Shredded Cheese
7 gram Cilantro, chopped
3 Tomato
2 Jalapeno Pepper
20 White Corn Tortillas
1/4 cup Vegetable oil

Recipe Directions for Sour Cream Turkey Enchiladas

Boil Turkey (I subbed turkey for the traditional chicken), shred turkey. Put oil of small pan heat up, place tortillas one at a time for a few seconds on each side to soften tortillas. Boil tomatoes and peppers until tender, put in blender to make sauce. Mix turkey, soup, 1/2 of cheese, sour cream, and cilantro, until well blended. Spoon 1/4 cup mixture in each tortilla and roll up, place seam side down in baking dish. Pre-heat oven to 350 degrees. Spoon salsa over top of enchiladas in dish. Sprinkle with remaining cheese. Bake in oven for about 25 minutes or until cooked through. You can also add more sour cream on top as well as cilantro after enchiladas are done baking. I used fat free cream of chicken soup.
