These are great with soup and even for breakfast. I have even substituted no fat vanilla or plain yogurt if I do not have the sour cream.

Recipe Ingredients for Sour Cream & Sweet Potato Biscuits

1 1/4 cups all-purpose flour
1/2 cup whole wheat flour
2 tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/4 tsp ground cinnamon
3/4 cup light sour cream
3/4 cup mashed sweet potato
3 tbsp butter, melted

Recipe Directions for Sour Cream & Sweet Potato Biscuits

  1. Preheat oven to 425 F. Spray a large baking sheet with cooking spray and set aside.

  2. In a large bow, combine both flours, brown sugar, baking powder, baking soda, salt and cinnamon.

  3. In a medium bowl, whisk together sour cream, sweet potato and melted butter. Add wet ingredients to dry ingredients and stir using a wooden spoon until mixture forms ball.

  4. Turn dough out onto a lightly floured surface. Roll out to 3/4 inch thickness. Cut into 2 1/2 inch rounds using a biscuit or cookie cutter. Re-roll scraps of dough to make 12 biscuits total.

  5. Transfer biscuits to baking sheet and bake for 10 minutes, until biscuits have puffed up and are light golden brown.

  6. Serve warm.

  7. TIP: For sweet potato peel, chop and boil 1-2 sweet potatoes until tender. Then mash with fork or puree until smooth in a food processor. Cool before using.
