Wonderful quick and easy casserole. To make this even healthier, substitute zuccini (about 3-4 medium zuccini cubed) for the noodles. When I do this substitution, I cook 1 chopped medium onion with the beef instead of the green onion. Also it needs to cook about 40 minutes.

Recipe Ingredients for Sour Cream Noodle Bake

8 ounce noodles, wide
1 tablespoon butter (optional)
1/8 teaspoon pepper
1 cup tomato sauce
1 cup cottage cheese, small curd
1/2 teaspoon garlic salt
1 cup sour cream
1 pound ground beef, lean
1 cup green onion, chopped
1 cup cheddar cheese, sharp, grated

Recipe Directions for Sour Cream Noodle Bake

  1. Cook noodles in boiling water. Rinse and drain

  2. While noodles are cooking, Brown beef (in butter optional) and add pepper and garlic salt and tomato sauce

  3. Simmer for 5 minutes

  4. Combine cottage cheese, sour cream, chopped onions and noodles

  5. Alternate layers of noodle mix and meat mix in a 2 qt casserole, BEGINNING with noodles and ending with meat.

  6. Top with shredded cheese

  7. Bake covered at 350 for about 20-25 minutes or until cheese is melted and browned

  8. Serves 8
