Sour Cream Ham Supper Recipe

Original recipe uses butter instead of olive oil and full fat sour cream and serves over 1/2 head shredded cooked cauliflower. I prefer barley or basmati rice. Recipe modified for Peg brachen's "The I Hate To Cook Book."

Recipe Ingredients for Sour Cream Ham Supper

3/4 cups basmati rice
1/2 onion, medium, diced
2 cups ham, cooked, cut into strips
8 oz mushrooms, sliced
2 tbsp olive oil
1/2 cup nonfat sour cream

Recipe Directions for Sour Cream Ham Supper

  1. Prepare 3/4 cups basmati rice according to directions or -

  2. Run cauliflower through the shredding blade of the food processor. Put it in a microwaveable casserole, add a couple tbsp of water, cover, and cook on high for 6 to 7 minutes.

  3. While rice (or cauliflower) is cooking, dice the onion and cut the ham into smallish strips. Heat the olive oil (or melt the butter) in a large, heave skillet over medium heat, and saute the onion, ham, and mushrooms in it, stirring frequently. When the onion is limp and translucent, turn the burner to low and stir in the sour cream. Heat through, but don't let is come to a boil or the sour cream will "crack."

  4. (Drain the cauliflower.) Divide rice (or cauliflower) between 3 plates, and spoon the ham mixture over it.
