By using reduced fad cheese and fat free sour cream, I was able to lighten this recipe considerably.

Recipe Ingredients for Sour Cream Enchiladas

1/2 cup Mild Diced Tomatoes and Green Chilies
1 serving Sour Cream Fat Free
2 tbsp Green Chilies
1 cup, chopped or diced Chicken, Breast, Meat Only
1 tortilla 6" Low Carb Whole Wheat Tortillas 10ct

Recipe Directions for Sour Cream Enchiladas

Put 2 chicken breasts, 1 can of Rotel tomatoes with green chilies, and 1 sm. can of green chilies in your slow cooker or crock pot and cook for 4-6 hours or until your chicken shreds easily. In a saucepan heat cream of chicken soup and fat free sour cream till just before it boils. Put about 2 tablespoons of shreeded chicken mixure into each low carb tortilla. Roll up tortilla and place into baking dish sprayed with cooking spray. Make sure to put the seam side down. Repeat until all of chicken mix is used. Pour soup/ sour cream mixture atop the tortillas and sprinkle with about 1/4 cup of reduced fat colby jack. Bake at 350 for about 20 minutes.
