I have tried all sorts of cornbread, and this is seriously the best I've ever had.

Recipe Ingredients for Sour Cream Cornbread

1/3 cup safflower oil
1/4 cup brown sugar
4 eggs
1 cup fat free sour cream
1 cup nonfat milk
1 2/3 cups whole wheat pastry flour
1 2/3 cups yellow cornmeal
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt

Recipe Directions for Sour Cream Cornbread

  1. Preheat oven to 425, and prepare two 9-inch pans (either round or square) or a 9x13 baking pan with spray oil.

  2. Whisk together oil and sugar until well blended.

  3. Add eggs, 2 at a time, and beat well after each addition.

  4. Whisk in sour cream and milk.

  5. Mix all dry ingredients together in a separate bowl and then add the dry ingredients to the wet ingredients and beat just until blended.

  6. Let batter rest for 15 minutes.

  7. Spoon batter into pan(s) and bake for 15-17 minutes.

  8. Let cool a few minutes, then turn onto a rack and slice, and serve hot with butter and honey!
