Easy to make. May sub other potatoes if you like such as red. Leave half of peels on for rustic touch.

Recipe Ingredients for Sour Cream & Chive Mashed Pot

2 lbs idaho potatoes
3/4 cup 2% milk
1/2 cup low fat sour cream

Recipe Directions for Sour Cream & Chive Mashed Pot

  1. Peel and quarter potatoes.

  2. Place in large pot and add enough water to come up to 2 inches from the bottom (potatoes only need to be just covered with water).

  3. Bring to boil for 20-25 minutes, until pierce easily with a fork.

  4. Drain and return to pot and mash.

  5. Mix in milk with masher. Stir in sour cream. Season to taste with chives, salt, and pepper. Add more milk for smoother potatoes.
