Recipe Ingredients for Sour Cream Chicken Enchiladas - Version Lite

13 tortillas La Banderita Yellow Corn Tortillas
1 1tsp Olive Oil
1 cup, chopped Onions
24 oz Rotisserie Chicken
8 oz 50% Light Jalapeño Cheddar
4 tbsp Original Stick
1 cup Chicken Broth
16 oz Reduced Fat Sour Cream
4.268 oz Tomatoes Diced with Green Chilies

Recipe Directions for Sour Cream Chicken Enchiladas - Version Lite

  1. Preheat oven to 375 degrees. Spray a 9 x 13 inch baking dish with cooking spray.

  2. The Filling: Saute the onion in the oil just until softened. add the shredded chicken, sprinkle with salt, and toss to combine. Set aside and allow to cool. Add the shredded Monterrey Jack Cheese and mix thoroughly.

  3. The Tortillas: Soften the corn tortillas by

  4. Wrapping tightly in damp paper towels and microwaving for 40 seconds.

  5. Wrapping tightly in aluminum foil and heating the the oven for 5 minutes, or

  6. Heating shortening, oil or lard in a skillet and, using tongs, dipping each tortilla for 15 seconds in the hot oil, letting the excess drip back into the skillet. Drain the softened tortillas on paper towels as they are cooked.

  7. Place an equal amount of chicken mixture on each of the 12 tortillas, roll them up and place them , seam side down, in the baking dish. Place a jalapeno on top of each enchilada.

  8. The Sauce: Over medium heat in a sauce pan, melt the butter, add the flour and stir vigorously with a wooden spoon for a minute or so. Gradually whisk in the chicken broth and cook until mixture thickens and bubbles. Reduce the heat, or remove from the burner , and stir in the sour cream and green chilies. Do not allow the sauce to boil, but gently heat through.

  9. Pour the sauce evenly over the tortillas in the dish and back for 30 minutes at 375. Sprinkle with cilantro
