This is a very yummy and hearty soup!

Recipe Ingredients for (Soups, Salads, & Starters) Leek and Potato Soup

2 tbsp butter
2 lbs leeks
6 cups water
2 lbs potatoes

Recipe Directions for (Soups, Salads, & Starters) Leek and Potato Soup

  1. In a large sauce pan, melt the butter over medium heat.

  2. Add the leeks. Saute just until they begin to soften, about 3-5 min.

  3. Add water (or stock) and potatoes. Bring to a boil. Reduce heat to low. Cover and simmer until potatoes are very tender, about 20 minutes.

  4. Season to taste with salt and pepper. Ladle into bowls and garnish with chives with desired.
