Savory, yet with a hint of sweet spice. Great first course, or as a main dish served with swiss cheese and crackers.

Recipe Ingredients for SOUPS: Pumpkin Soup

3 slices turkey bacon, chopped
1/2 cup sweet onion or shallot, chopped
1 tablespoon olive oil
2 cups canned pumpkin (16 ounces)
1 quart chicken stock
1/2 tsp cinnamon
1/4 tsp salt
1/4 tsp grated nutmeg
8 oz light sour cream

Recipe Directions for SOUPS: Pumpkin Soup

  1. Cook the turkey bacon and onion or shallot in the olive oil over medium heat until bacon is crisp.

  2. Stir in pumpkin; then add chicken broth, stirring slowly to blend well. Heat to a boil; reduce heat and simmer 5 minutes.

  3. Stir in cinnamon, salt, and nutmeg. Keep at a low simmer, stirring frequently, another 5 - 10 minutes.

  4. Place 1 cup of soup into each of 6 serving bowls. Top with a large dollop of light sour cream, and swirl the sour cream with a spoon to make a white swirl in the soup. Serve immediately.
