Makes 12 servings



1 cup = 1 serving. Authentic Mexican flavor can be obtained by using Adobo chili powder. Options: Add up to 1 tablespoon crushed red pepper flakes for extra heat. 1/2 cup beer can be added as the extra liquid.

Recipe Ingredients for SOUPS: Feliciano Chili

1 pound 4% fat ground round
1/2 pound turkey sausage (ground)
1 1/2 cups onion, chopped
2 tablespoons olive oil
1/2 cup water or other liquid
1 tsp salt
1 tsp black pepper
3 tbsp chili powder
1 tbsp ground cumin
2 1/2 cups Ro-Tel Original (2 cans)
30 oz pinto beans (2 cans)
15 oz kidney beans (1 can)

Recipe Directions for SOUPS: Feliciano Chili

  1. Place the olive oil in a large open soup kettle. Cook the onion, beef, and turkey sausage over medium heat until well-browned and crumbled.

  2. Add the water or other liquid, and the salt, pepper, chili powder, and ground cumin. Stir well and simmer for 3 minutes to release the flavors.

  3. Stir in the Ro-Tel and simmer for 5 minutes.

  4. Add the beans with their liquid, mix well, and reduce to a simmer. Simmer at least 10 minutes, stirring frequently to prevent sticking. Longer simmering improves the flavor.

  5. Serve with tortilla chips, shredded lowfat cheese, fat free sour cream or mashed ripe avocado. Top with your favorite salsa.
