A double tomato soup, full of flavour that will leave you wanting more. Never eat instant again!

Recipe Ingredients for Soup - Tomato & Tomato

1 tbsp extra virgin olive oil
110 g onion (1 medium), chopped
65 g carrots, shredded
3 cloves garlic, crushed
10 g leeks, chopped - or shallots for a sweeter taste
150 g red bell pepper, diced
1 tsp brown sugar
1/4 tsp freshly ground black pepper
1/8 tsp salt
1/4 tsp oregano
15 g sun dried tomatoes packed in oil with herbs, drained - 3 halves
800 g canned diced tomatoes (2 cans), undrained
24 g vegetable stock cube - 2 cubes
800 ml water
10 basil leaves (large), divided

Recipe Directions for Soup - Tomato & Tomato

  1. Heat oil in a large saucepan over medium heat. Add the fresh vegetables and cook for 5 minutes or until they are soft, stirring frequently.

  2. Add sugar, pepper, salt and oregano. Cook for a further 5 minutes.

  3. Add sun-dried tomatoes, canned tomatoes and stock cubes, water and bring to a boil. Reduce heat and allow to simmer for 1hr. Remove from heat.

  4. Blend the hot soup in a blender in 2 batches until smooth. Careful not to allow the steam from the soup to build a vacuum in your blender - if you have an opening in the lid, leave it open and cover with a cloth whilst blending to catch splatters.

  5. Dish soup into deep bowls and garnish each serving with 1 basil leaf. Serve warm with crusty bread.

  6. As accompaniments you can serve sour cream, cooked pasta, hard-boiled eggs, freshly grated parmesan, home-made croutons and/or corn-on-the-cob.
