Modified from Barefoot Contessa. Serving size is a little over one cup. Calorie count without the toppings is ~150 per serving.

Recipe Ingredients for Soup: Mexican Chicken Soup

2 whole chicken breasts (4 split pieces), bone in, skin on
3 T. olive oil
2 T. salt, divided
2 tsp. ground black pepper, divided
2 c. chopped onions (2 onions)
1 c. chopped celery (2 stalks)
2 c. chopped carrots (4 carrots)
4 cloves garlic, chopped
2 1/2 quarts chicken stock, preferably homemade
28 oz. crushed tomatoes
2 jalapeno peppers, seeded and minced
1 tsp. ground cumin
1 tsp. ground coriander
1/2 c. chopped fresh cilantro leaves, optional
10 white corn tortillas, 6-inch diameter

For the toppings:
4 c. sliced avocado
8 T. sour cream
224 g lowfat shredded cheese (2 c.)
8 oz. tortilla chips, crushed

Recipe Directions for Soup: Mexican Chicken Soup

  1. Preheat the oven to 350F.

  2. Place chicken breasts skin side up on a sheet pan. Rub with olive oil, sprinkle with salt and pepper, and roast for 35 to 40 minutes, until done. When chicken is cool enough to handle, discard skin and bones, and shred the meat. Cover and set aside.

  3. Meanwhile, heat 3 T. olive oil in a large pot or Dutch oven. Add onions, celery, and carrots and cook over medium-low heat for 10 minutes, or until onions start to brown.

  4. Add garlic and cook for 30 seconds.

  5. Add chicken stock, tomatoes with their puree, jalapenos, cumin, coriander, 1 T. salt (depending on the saltiness of the chicken stock), 1 tsp. pepper, and cilantro, if using.

  6. Cut tortillas in , then cut them crosswise into -inch strips and add to the soup.

  7. Bring soup to a boil, then lower the heat and simmer for 25 minutes.

  8. Add shredded chicken and season to taste.

  9. Serve soup hot topped with 1/4 c. sliced avocado, 1/2 T. sour cream, 2 T. grated cheese, and crushed tortilla chips.
