Soup with Meatballs (Beef Balls) - low fat version

Recipe Ingredients for Soup with Meatballs (Supa de perisoare)

6 cups vegetable broth
156 ml tomato paste
400 g lean ground beef, boiled
10 g chopped parsley
10 g salt
10 g pepper
10 g allspice
156 ml tomato paste
1 tbsp bay leaves, whole
1 egg
1 tbsp balsamic vinegar

Recipe Directions for Soup with Meatballs (Supa de perisoare)

  1. Bring vegetable broth to boil.

  2. Make beef balls: combine beef, 1 tbsp tomato paste, egg, salt pepper (other spices) mixing well. (You can also add 1 tbsp rice to the mixture). With wet hands, shape meat into small balls. Add meat balls to simmering soup, reducing heat to very low. Boil until the meat is done. Add parsley.

  3. Add 1-2 tbsp balsamic vinegar.
