Recipe Ingredients for Soup, lentil and sweet red pepper

200 g lentils
2 large onions, finely sliced
2 medium sweet red pepper, diced
4 cloves garlic
2 tsp ground cumin
1/4 tsp turmeric, ground
2 tbsp sunflower oil
2 tbsp butter
5 g vegetable or chicken stock cube
1 tsp balsamic vinegar
32 fl oz water
1 tsp dried parsley

Recipe Directions for Soup, lentil and sweet red pepper

  1. Heat the fats in a large, thick-based pan.

  2. Add the onions and stir to coat well. Cover the onions and cook a on low/medium heat, stirring occasionally, until they are transparent and soft (5-10 min).

  3. Uncover, add the diced pepper and crushed garlic and cook on a medium heat until the peppers are cooked through, ensuring the garlic doesn't catch.

  4. Add the cumin, turmeric and parsley, plus salt and pepper to taste, and fry off all ingredients on a medium heat until the onion is beggining to turn golden and all liquids have steamed off.

  5. Add rinsed lentils, stock cube and 1.5 to 2pt water (less for red lentils, more for green lentils). Bring to the boil, then add balsamic vinegar, cover and simmer for 10-20min (red lentils) or 30-45min (green lentils).

  6. When lentils are tender, serve. If green lentils are being used, use a handblender briefly or remove, puree and recombine half the soup before serving.
