Easy way to use all the vegetables in the refrigerator!

Recipe Ingredients for Soup, Leek

1/2 c raw onion, diced
1/2 c fresh carrots, diced
1/2 c fresh celery, diced
3 c fresh leeks, chopped
1 1/2 c potatoes, peeled, diced
3 med turnips, peeled, diced
1/2 c fresh parsley, chopped
4 c vegetable broth (pacific)
2 T Olive oil
1 T butter
2 T lemon juice

Recipe Directions for Soup, Leek

Sautee onion, carrot and celery in oil and butter. Add leeks, potatoes, turnips and broth. Bring to a boil, reduce heat to low and simmer 20-30 min, or until potatoes and turnips are tender. Remove from heat, add chopped parsley and lemon juice to taste, season to taste with salt and pepper.
