Recipe Directions for Soup Italian Wedding Soup

  1. PREPARATION

  2. ? In a large pot sauté the onions, carrots, celery and garlic in the olive oil and butter for 2 to 3 minutes.

  3. ? Season with salt and pepper.

  4. ? Add the broth and bring to a boil.

  5. ? Reduce and simmer.

  6. ? Add the spinach and parsley and simmer for around a 30 minutes.

  7. ? Add the meatballs and cook for 15 to 20 more minutes.

  12. 1/2 cup of bread crumbs

  13. 1/2 cup of parmesan cheese

  16. 1/4 tsp of pepper

  17. PREPARATION

  18. ? In a large bowl combine all the ingredients together.

  19. ? Shape the meat into small 1 inch balls.

  20. Serve with parmesan cheese. Serves 8 to 10 people
