Recipe Ingredients for Soup - Italian Tortellini

2 tbsp. olive oil
1 cup onion
1 cup celery
2 tsp. garlic
8 oz. fresh mushrooms
32 oz. canned tomatoes
15 oz. chick peas
8 cups chicken broth
3 tsp. Italian Seasoning
10 oz fresh spinach
10 oz. cheese tortellini
16 oz. meatballs
3 tbsp. corn starch

Recipe Directions for Soup - Italian Tortellini

  1. Saute first 5 ing. until tender

  2. Add tomatoes, chick peas, broth and seasoning

  3. Simmer 10 minutes

  4. Add chopped spinnach, tortellini and cooked meatballs (cut in half)

  5. Cook until tortellini is tender (10 minutes)

  6. Mix corn starch and water and thicken as desired

  7. Serving size 1 1/2 cup
