Recipe Ingredients for soup - Italian egg drop soup (vegetarian)

2 cups organic vegetable broth
2 large egg whites
1/2 ounces parmesan cheese
1/4 tsp pepper
1/4 tsp dried parsley

Recipe Directions for soup - Italian egg drop soup (vegetarian)

  1. Bring the broth up to a boil. In the mean time, beat the egg whites with a little bit of the parmesan.

  2. When broth is boiling, drizzle in the egg whites so that they form little "tatters." When all the egg is gone, add in the remaining parmesan, pepper, and parsley.

  3. Add salt, if desired. Serve hot. Great with crusty bread.
