Recipe Ingredients for Soup - Healthy Fat Burning

1 cup great northern beans, dry
1 tablespoon olive oil
2 cups mushrooms, chopped
1 1/2 cups onion, chopped
3 cloves garlic, minced
800 g tomatoes or 3 cups fresh
2 carrots, peeled & chopped
2 stalks celery
4 cups water
1 tsp dried sage
1 tsp dried thyme
1 tsp dried oregano
1 black pepper to taste
2 1/2 cups elbow macaroni, cooked

Recipe Directions for Soup - Healthy Fat Burning

  1. Prepare beans as per package instructions, reserving the liquid.

  2. Heat oil in a large pot, then add mushrooms, onions, carrots, celery and garlic; sauteing for 5 minutes until softened.

  3. Add tomatoes and seasonings; cover and cook over medium heat for 20 minutes.

  4. Combine reserved bean liquid with water to make 4 cups and add it plus beans and cooked macaroni to vegetable mixture.

  5. Bring to boil, cover and simmer until soup is thoroughly heated, stirring occasionally.
