I light broth soup full of flavour

Recipe Ingredients for Soup with Greens

2 l chicken stock
1 tbsp+chopped shallot
250 g dried cheese tortellini
4 bunches spinach, chopped roughly (3 inch pieces, keep stems intact)

Recipe Directions for Soup with Greens

  1. Sautee the shallot with a bit of olive oil, add the stock and simmer while you cook the tortellini in another pot.

  2. (Note: cooking the tortellini in the broth will make the soup way to starchy, and the noodles will suck up most of your stock leaving you with very salty noodles and no broth).

  3. When the tortellini is almost done (aprox 4 minutes) add the spinach to the broth.

  4. When pasta is done- drain and add a serving to each bowl, top with spinach from the broth, then pour in some broth to your liking.

  5. Serve! Garnish with some freshly grated parmesan if you have it.

  6. Another great addition is peas (fresh or frozen, add just before you put in the spinach).
