Recipe Ingredients for Soup, German Sauerkraut

6 medium slices bacon
1/2 cup onion, chopped
14 ounces sauerkraut
1/2 teaspoon black pepper, ground
1/4 teaspoon thyme
1 teaspoon caraway seeds
2 cups Riesling wine
4 cups red potatoes, diced
1 quart chicken broth

Recipe Directions for Soup, German Sauerkraut

In a 6 quart stock pot, fry the slices of bacon until it is crisp. Remove and set aside. Drain all but 1 tablespoon of the bacon fat from the stock pot. Saute the chopped onion in the stock pot until it is slightly browned. Add the sauerkraut, including any juice, black pepper, thyme, caraway seeds and wine. Bring to a boil as you dice the red potatoes. Add the potatoes and chicken stock and bring to a boil once again. Cover and cook over medium heat for 1 hour, until the potatoes are soft. Crumble the bacon and stir into the soup. Serve.
