Title says it all! Flavourful soup that's great for a cold, rainy/snowy day.

Recipe Ingredients for Soup - drumettes and lotsa veg

1 tbsp extra virgin olive oil
3 cloves garlic, roughly crushed in pestle & mortar
75 g celery
190 g carrots
275 g potatoes
35 g leeks
80 g red onion
80 g canned chopped tomatoes
15 g vegetable stock cube
300 g cabbage
70 g sugar snap peas
220 g canned kidney beans, washed well and drained
375 g chicken wing drumettes, skin on
1 tbsp plain flour
1/4 tsp salt
1/8 tsp lemon pepper
1/8 tsp paprika
1/2 tbsp parsley
1 pinch Thyme, Dried
1 pinch dried oregano

Recipe Directions for Soup - drumettes and lotsa veg

  1. Dice all veggies into unifrom size.

  2. Coat drumettes with salt, flour, pepper and paprika.

  3. Heat half the oil in a large pot.

  4. Brown drumettes. Remove (do not drain on paper towel) into a bowl and set aside.

  5. Heat remainder of oil. Add in all veggies except cabbage and diced sugar snap peas. Sweat off veggies.

  6. Add cabbage and stir well. Add in canned tomatoes, stock cube and water.

  7. Bring to the boil, add in drumettes, herbs and cook on low heat for 40min.

  8. Add in diced sugar snap peas and kidney beans. Cook for further 20 min.
