Make batch in slow cooker the night before and eat only this the day of diet soup day. Have 2 soup diet days to allow for more calories on the other 5 days (extra 300 cals a day on 1500 cal/day diet.

4 cups broccoli, chopped
2 cups corn
1 can mushrooms
1 3/4 cups canned tomatoes - no salt
5 cubes beef stock
8 cups water
1/4 cup pearl barley

Throw everything in slow cooker and cook for 6-8 hours on low or 3-4 hours on high
