For a main dish option, add cooked, diced chicken or turkey breast to the pot in the last 20 minutes of cooking. Serve garnished with a dollop of sour cream and chopped cilantro.

Recipe Ingredients for Soup - Curried Squash & Apple

3 cups chicken broth, fat-free, less-sodium
2 cups onion, chopped (about 1 large)
2 teaspoons garlic, minced
1 1/2 teaspoons ginger, fresh grated peeled
1 teaspoon salt
1 teaspoon curry powder, red
1/2 teaspoon ground coriander
1/2 teaspoon black pepper, freshly ground
2 pounds butternut squash (3 cups), peeled, cubed
2 medium apples, cored, peeled, and diced (2 cups)

Recipe Directions for Soup - Curried Squash & Apple

  1. Combine all ingredients in an electric slow cooker.

  2. Cover and cook on low for 8 hours or until squash is tender.

  3. Place half of squash mixture in a blender, and process until smooth.

  4. Pour pureed mixture into a large bowl.

  5. Repeat the procedure with remaining squash mixture.
