Salmon and veggie soup made creamy with the help of light sour cream.

Recipe Ingredients for Soup - Creamy Fish

1 tbsp extra virgin olive oil
175 g carrots, chopped
45 g leeks, thinly sliced
240 g potatoes, unpeeled & chopped
65 g celery root, chopped
35 g celery (1 small stalk), chopped
1 l water
18 g Maggi fish stock cube - 1.5 cubes - calorie info here for chicken cube since no fish in database
115 g broccoli, cut into small florets & stems chopped
300 g salmon fillets, cooked dry heat
1/16 tsp salt
1 pinch lemon pepper
3 g parsley, finely chopped
180 g TINE lettrømme - light sour cream

Recipe Directions for Soup - Creamy Fish

  1. Heat oil in a large saucepan. Sweat off all veggies except broccoli.

  2. Cook fish fillets seasoned with salt and lemon pepper in a good non-stick frying pan on medium heat without any oil/fat. Set aside.

  3. Add water and stock cubes to veggies and boil for about 20min. Add in broccoli stems. Cook for further 10min.

  4. Reduce heat. Add in broccoli florets, parsley and sour cream. Stir well.

  5. Break fish up into large chunks & add to veggies and broth.

  6. Cook till broccoli is just tender.

  7. Serve hot/warm with crusty bread.
