Recipe Ingredients for Soup Cream of peas and carrots

220 g split peas
4 cups water
1 tsp Pepper, White
1/2 tsp turmeric
1/2 tablespoon ground coriander
30 g dried porcini mushrooms
3 tbsp sunflower oil
2 carrots
1 1/2 tsp salt
2 tbsp parsley
1 1/2 tsp cumin seed

Recipe Directions for Soup Cream of peas and carrots

  1. Soak the split peas in 3 cups hot water for 5 hours, then drain and a sieve. Place the split peas in a heavy 3-quart saucepan, better iron. Fill with water, add green chili peppers, turmeric, coriander and a dash of ghee (or a mixture of vegetable and butter), oil. Bring to a boil over high heat. Adjust light to moderately weak, close tight lid and let boil gently for an hour. Add the carrots and mushrooms and continue to cook under the lid about 30 minutes, until the split peas are tender and fully cook. Open the lid, add salt and herbs and mix.

  2. Heat the remaining melted butter (or a mixture of vegetable oils and butter) in a small saucepan over medium or moderately high heat. Drop in hot oil and fry cumin seeds until they turn brown. Vsypte asafoetida, fry for about 1-2 seconds, then quickly pour in seasoning in the soup. Immediately close the lid and leave for 1-2 minutes, to soup scented with spices. Toss and serve.
