Recipe Ingredients for soup, chicken, Heidi's quick

7 cups chicken broth, low-sodium
1 cup water
9 1/2 ounces chicken thighs, meat only
1 carrot, diced
1 stalk celery, diced
1/4 cup parsley
3 ounces shiitake mushrooms
2 cups cooked rice

Recipe Directions for soup, chicken, Heidi's quick

  1. Place chicken parts in 7 cups of stock and 1 cup of water. Boil until chicken is cooked.

  2. As chicken cooks, chop vegetables and herbs. Add to broth.

  3. Remove chicken when it is cooked, separate the meat from the bones, and dice. Return to the soup and boil for another 15 minutes. Add cooked rice (or pasta) and cook until warmed through. Add parsley before serving. Season with salt and pepper to taste.
