Recipe Ingredients for Soup, Chicken Bean Curry Stew

1/2 tbsp olive oil
1 onion, chopped
1 cloves garlic, minced
2 stalks celery, chopped
260 g carrots, (2 large), chopped
200 g potato, peeled and chopped (apx, "1/2 -1 potatoes")
340 g cooked shredded chicken (1/2- 1lb, or turkey),
1 1/2 cups chicken broth
1 1/2 tsp curry powder
1 cups milk,
1 tsp cornstarch, (2.7g)
250 g black beans, drained and rinsed (1 can),
1 salt
1 pepper

Recipe Directions for Soup, Chicken Bean Curry Stew

  1. In a large stockpot, saute onion and garlic in olive oil until soft.

  2. Add celery, carrots, and potato chunks and cook until soft (5-8 minutes).

  3. Season with salt and pepper.

  4. Add broth, chicken, and curry powder. Bring to a boil.

  5. In a small bowl, mix together cornstarch and milk. Once boiling, stir in milk and reduce heat to low.

  6. Once soup is simmering, stir in black beans. Allow soup to simmer for at least 20 minutes, longer is better. ("I simmered for a few hours on low!")
