A wonderful hearty soup that is great on a cold winter night. Plain unsweetened yogurt makes a nice addition.

Recipe Ingredients for Soup of Cauliflower, Chickpeas and Quadretti

1 head, medium (5-6" dia) Cauliflower
2 Potato medium (2-1/4" to 3-1/4" dia) Potato, Flesh And Skin
4 Medium Tomatoes
2 clove Garlic
2 tbsp chopped Onions
1 tbsp Rosemary, Fresh
1 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
70 grams Quadretti
70 grams (De Cecco) Quadretti
2 tbsp Olive Oil
2 dash Salt, Table
2 dash Pepper, Black

Recipe Directions for Soup of Cauliflower, Chickpeas and Quadretti

  1. Heat olive oil in a large pot. Brown onions, then add 1 garlic clove (crushed) and stir a few minutes.

  2. Add tomatoes and cook for about 5 minutes to let the water evaporate.

  3. Add potatoes, cauliflower and rosemary. Stir well to coat all the vegetables and cook for about 7 minutes, stirring.

  4. Add enough broth/water to cover the vegetables. You might want to add a bit extra if you're worried there won't be enough to cook the quadretti.

  5. Cook until vegetables are tender but not mushy.

  6. Remove rosemary sprig and add chickpeas. Cook for another 10 minutes.

  7. Add quadretti and the remaining garlic clove (whole) and cook until desired texture (ideally al dente).

  8. Sprinkle with olive oil, salt and cracked pepper to serve.
