Delicious Potato Leek soup-very easy

Recipe Ingredients for Soup Bible Leek and Potato Soup

2 ounces butter
2 leeks
1 small onion
12 ounces potatoes
24 ounces vegetable stock
1/4 tsp salt
1/8 tsp ground black pepper

Recipe Directions for Soup Bible Leek and Potato Soup

  1. Heat 1 oz of butter in a large pan over medium heat. Add the leeks and onion and cook gently, for about 7 minutes, until they are softened.

  2. Add the potatoes to the pan and cook for abotu 2-3 minutes, then add the stock and bring to a boil. Cover and simmer for 30-35 minutes, until the potatoes are tender.

  3. Season to taste and remove the pan from heat. Chop up and stir in the remaining butter. Serve Hot.
