Recipe Ingredients for Soul Smothered Chicken

2 tbsp butter
1 lb boneless skinless chicken breast, cubed
1 tsp salt
1/2 tsp ground black pepper
1/4 cup all-purpose flour
1 medium yellow onion, diced
1/4 cup celery, diced
1/4 cup carrot, diced
2 cloves garlic
11 1/4 oz cooked carrots
1 1/2 oz potatoes, diced
9/20 oz celery
9/20 oz canned peas
9/20 oz green beans
9/20 oz canned corn
9/20 oz lima beans
2 cups chicken broth
2 tbsp all-purpose flour
1/4 tsp cayenne pepper
1/4 tsp salt
1/4 tsp ground black pepper

Recipe Directions for Soul Smothered Chicken

  1. Melt butter in a large skillet over medium-high heat. Season chicken pieces with 1 tsp salt and 1/2 tsp pepper. Dredge in 1/4 cup flour, place in skillet and brown on all sides. Set chicken asside reserving butter.

  2. Reduce skillet to medium-low, and stir in onions, celery, garlic, and carrots. Cook 5 minutes, until tender.

  3. Gradually mix in Veg-All, mushroom, chicken broth, and flour. Season with cayenne pepper and remaining salt and pepper. Bring to a boil and reduce heat to low.

  4. Return chicken to skillet, cover, and continue cooking 30 minutes, until chicken juices run clear and gravy has thickened.
