Recipe Ingredients for Souffleed Spinach Omlet

1 pound baby spinach leaves
2 tablespoons extra-virgin olive oil
1 small yellow onion
1/2 teaspoon freshly ground pepper
1/2 teaspoon freshly grated nutmeg
1 cup parmesan cheese
8 egg whites
1 whole egg

Recipe Directions for Souffleed Spinach Omlet

  1. Cook spinach according to package directions (Boil a pot of water and stir in spinach. Drain; squeeze dry.

  2. Place in blender or food processor container and chop.

  3. Place eggs in medium-size bowl; whip with wire whisk until well blended.

  4. Add spinach and remaining ingredients; stir until mixed.

  5. Turn into generously buttered 6-inch souffle dish.

  6. Heat remaining tablespoon of olive oil in a 12-inch ovenproof pan over medium-high heat. Cook for 1-2 mins or until edges are firm. Place pan in preheated 450F oven on center shelf and cook about 7 mins or until puffed out.

  7. Garnish with thinly sliced cucumber rings, if desired.
