potato chunks mixed in cheese sauce and fried in oil

Recipe Ingredients for souffled cheese potatoes

2 pounds potatoes - chunks
2/3 cup heavy cream
3/4 cup swiss cheese
1 pinch cayenne pepper
2 egg whites
2 tbs vegetable oil
1 salt and pepper

Recipe Directions for souffled cheese potatoes

  1. cook potatoes 10 minutes. Drain and dry. Set aside

  2. Mix heavy cream and swiss cheese. Stir in cayenne pepper and salt and pepper.

  3. whisk egg whites until stiff peaks form. fold into the cheese mixture

  4. add the cooked potatoes to thoroughly coat in mixture

  5. Heat oil for deep frying to 350. cook potatoes for 3-4 minutes.
