Recipe Ingredients for Sort-of-Thai Noodles

1/2 lb rice noodles
1/4 cup sugar
1/4 cup fish sauce
1/4 cup white vinegar
2 tbsp peanut oil
1/2 lb shrimp, medium, shelled
2 cloves garlic, minced
1/2 lb ground pork
4 scallions
2 eggs
1 tsp red pepper, crushed
1/4 cup lime juice

Recipe Directions for Sort-of-Thai Noodles

  1. Soak noodles in hot water to cover for 20 minute. Mix sugar, fish sauce, and vinegar together and set aside. Heat the oil in a wok until it is very hot and saute the shrimp 1 minute. Remove and set aside

  2. Add the garlic to the wok and as soon as it strats to color and get fragrant, add pork and half scallions. saute just until pork loses it redness, then add the drained noodles and mix quickly. Add the reserved fish sauce mixture, reduce heat to medium and cook until noodles have absorbed all the liquid.
