Sort-of Stir-Fry Recipe

Something I threw together last night. The sodium count is off because the system doesn't recognize low sodium teriyaki sauce.

Recipe Ingredients for Sort-Of Stir-Fry

1/2 red pepper
2 cups snow peas, whole pods
4 ounces mushrooms
2 medium carrots
1 teaspoon sesame seeds, divided
8 ounces chicken breast, boneless and skinless, chopped very small
3 tablespoons teriyaki sauce, low sodium, divided
1 teaspoon garlic powder
1 teaspoon onion powder
1 pinch of salt
1 teaspoon black pepper
2 tablespoons dried basil

Recipe Directions for Sort-Of Stir-Fry

  1. Chop chicken up into tiny bite-sized pieces and season with a little of the pepper, onion powder, and garlic powder. Cook through in a non-stick pan with a little no calorie cooking spray, then add in 1 tablespoon of the teriyaki and 1/4 teaspoon of the sesame seeds. Heat for a minute longer and make sure chicken is coated in sauce and seeds. Set aside and keep warm.

  2. On a cookie sheet, lay out all your chopped veggies. Sprinkle with the remainder of the garlic powder, onion powder, salt, pepper, and basil. Spray with some more no calorie cooking spray. Cook at 350 degrees in the oven for 10 minutes. Give the veggies a toss and a stir and then cook for another 10.

  3. Lay veggies into a bowl or plate. Top with chicken, remaining 2 tablespoons of teriyaki and the rest of the sesame seeds. Toss and enjoy! You can use less or more teriyaki depending on how strong you like the taste or how closely you're watching your sodium intake.
