This salad was developed by Bobby Flay for his daughter Sophie. You can serve this with white and blue corn tortilla chips and chopped fresh chives for garnish, but must include the extra calories.

Recipe Ingredients for Sophie's Chopped Salad

2 T. balsamic vinegar
1/2 t. dijon mustard
1/2 t. kosher salt
1/4 t. pepper, freshly ground
4 T. canola oil
3 cups lettuce, romaine, finely chopped
2 tomatoes, beefsteak, seeded and finely diced
1/2 c. red beans, canned/rinsed/drained
1 1/5 c. chickpeas, canned, rinsed and drained
1/2 c. olives, nicoise, pitted and coarsely chopped
3/4 cup reduced fat cheddar cheese, white cheddar and monterey jack combined

Recipe Directions for Sophie's Chopped Salad

  1. Blend the vinegar, mustard, salt and pepper until smooth.

  2. With the blender motor running, slowly add the oil and blend until emulsified.

  3. Set aside.

  4. In a large bowl, toss the lettuce, tomatoes, beans, chickpeas, olives and cheeses together.

  5. Dress lightly with the balsamic vinaigrette. Garnish with tortilla chips and chives if desired.
