A variation on Mexican sopes using regular (European) corn flour and a combination of whole grain wheat and white wheat flour.

Recipe Ingredients for Sopes With Refried Beans, Salsa, and Cheese

100 g whole grain flour
100 g white flour
75 g corn flour
8 tbsp warm water
4 tbsp vegetable oil
1 tbsp salt
250 g kidney beans
3 small onions
1 tbsp vegetable oil
100 g salsa
100 g grated cheese

Recipe Directions for Sopes With Refried Beans, Salsa, and Cheese

  1. Mix flours, salt, water, and oil in a bowl. Knead until the dough is smooth. Cover, set aside, and let sit for 10-30 minutes.

  2. In a pan, heat the remaining 1tbsp of oil, and brown the diced onions in it using high to medium heat. Add beans (without water from can), and squish them, using a meat tenderizer or similar. Add a few tbsp of water if needed, reduce heat and let simmer.

  3. Knead the sope dough again, adding white flour and/or water if necessary. Cut into 8 pieces. Form flat, ca. 10cm diameter sopes, heat them in a pan on low to medium heat for 5-10 minutes.

  4. Remove sopes from pan and form a rim around their edges, about 1cm high. Add a portion of refried beans and salsa to each, then put back in pan and finish to cook them (ca. up to another 5 minutes).

  5. Grate cheese and top sopes with it, possibly adding other condiments (sour cream, hot sauce) or lettuce/tomatoes, etc. to taste.
