Make this using sopes instead of tortillas. Sopes are slightly thicker corn tortillas in the shape of a large jar lid. They can be found in the specialty Mexican food section of the supermarket.

Recipe Ingredients for Sopapillos

8 corn tortillas
1 3/4 cups pinto beans
1/2 cups corn
12 ounces chicken, cooked
1 cup salsa
1 cup cheddar cheese, shredded
8 tomato slices
8 tbsp. fat free sour cream

Recipe Directions for Sopapillos

Cook chicken in a large skillet. Cool and cube. Return to skillet and add pinto beans, corn, onion, and 3/4 cup salsa. Mix and simmer for 15 minutes. Warm sopes in oven or microwave. Place one tomato slice in a sope and top with 1/8 of skillet mixture, 1/8 of cheese, and 1 tbsp. each of salsa and sour cream. Serve immediately.
