Love this recipe, super simple, super quick - my favorite two things.

Recipe Ingredients for Sopa

8 cups noodles
10 oz ro*tel tomatoes
12 oz chicken breast
8 oz tomato sauce
4 peppers, green chili
1 medium onion,diced
1 tbsp olive oil

Recipe Directions for Sopa

Saute onions and dry noodles (16 oz Package) in olive oil. When noodles are toasty, add water (3-4 cups), the tomato sauce, tomatoes, green chili (chopped) and the chicken. Stir and reduce heat. Add salt and pepper to taste. Cook until noodles are tender.
