Recipe Ingredients for Sopa de Mani

1/2 cup of white onion,finely chopped
1/2 tsp olive oil
1/2 tbsp of oregano
1/4 tbsp marjoram
1/2 tsp salt
1/2 tbsp cayenne pepper, bolivian ?aji? paste, to taste
4 cups of water
2 tbsp chicken bouillon
1 carrots, cut julienne style
2 medium potatoes, peel, cut in quarters
1/2 cup of peanuts,salted
1/4 cup of water
1/4 cup of milk
1/4 cup of crackers
1/4 cup of peas
1/4 cup parsley, finely chopped

Recipe Directions for Sopa de Mani

  1. In a large soup pot over medium heat, heat oil. Add the onions and saute until translucent.

  2. Stirring constantly, add the oregano, aji and marjoram and let it cook for another minute until they are aromatic. Stir in the chicken broth, add carrots and potatoes. Taste the soup and adjust seasonings with salt. Increase temperature. When the liquid reaches a boil, reduce the heat and simmer in a medium low heat.

  3. In a blender add the peanuts,crackers water and milk..blend to a smooth puree.

  4. Slowly incorporate the puree into the soup until this becomes smooth....let it cook until all vegetables are tender and add the peas. after a couple of minutes, it is ready to serve. Garnishing with the parsley.
