Sopa de lentejas (molida) sin tocino

Recipe Ingredients for Sopa de lentejas

2 1/2 cups lentils
6 garlic cloves, medium
2 cups minced shallots
1/2 cup olive oil
6 tbsp chicken bouillon
3 jalapeno pepper
4 medium roma tomatoes
15 ounce contadina tomato sauce
1 tbsp ground black pepper

Recipe Directions for Sopa de lentejas

  1. Boil Lentils and roma tomatoes

  2. Peel tomatoes once boiled and puree with lentils using a blender or food processor

  3. Chop or Mince shallots and garlic

  4. Sautee minced shallots, garlic and peppers in the olive oil until golden

  5. Add pureed lentils to shallot/garlic/pepper mixture and simmer. Add chicken/vegetable stock/bouillon
