Portuguese Kale (Collards) soup with potatoes

Recipe Ingredients for Sopa de Couves com Batata

1 onion, sliced
2 tbsp unsalted butter
4 cloves of garlic, minced
10 potatoes, peeled and cubed
1 lb collard greens, chopped/sliced
3 cups warm water
2 cups chicken broth
1/4 cup white wine
2 tbsp salt
2 tbsp olive oil
3/20 lbs bacon, sliced in 1 inch pieces
1 tbsp hot sauce

Recipe Directions for Sopa de Couves com Batata

  1. Saute onions and garlic in butter in a frying pan (or saute pan). When onions are "glassy", remove from heat and place into large soup pot for now.

  2. In the same pan you used for the onions and garlic, now fry the bacon pieces on a medium or medium-low heat. You don't want the bacon actually crispy but you want to render some of the fat from the pieces. This should take about 10 minutes and then add bacon with bacon fat into the soup pot.

  3. Add the collard greens to a large bowl, then add the warm water, the salt, and the olive oil. Let sit for about 30 minutes.

  4. While waiting for the collard greens, boil the potatoes until cooked; then rinse with cold water. Put aside.

  5. When the collard greens are ready, "massage" the pieces with your hands - wringing and squeezing. This is especially important to getting the greens to cook well. Add the greens and the water to the soup pot.

  6. Add the chicken broth, wine, and hot sauce.

  7. Cook over high or medium-high heat until boiling. Add the potatoes and let come to a boil again. Lower heat to medium and let simmer for about 1 hour.
