Recipe Ingredients for Sopa de cebolla y flor de calabaza caldo de res

250 g Beef, Plate, Inside Skirt Steak
4 cups water
2 1/2 large onions
200 g Squash Blossoms,
4 medium tomatoes
2 chipotle peppers
4 cloves of garlic
1 tbsp salt
1 tsp pepper
2 tbsp canola oil

Recipe Directions for Sopa de cebolla y flor de calabaza caldo de res

  1. Cook beef in pressure cooker with a piece of onion and a clove of garlic in 4 cups of water. Sautee chopped onions and flores de calabaza in oil, with salt and pepper. In blender, process tomatoes, 1 chipotle, 1/4 onion and rest of garlic with beef broth.

  2. Add to sauteed onions and flores. Add remaining chile and let simmer for 10 minutes. Serve with shredded beef. Add cheese and tostadas if desired as garnish
